We live "off-grid" without much electricity and are trying to provide most of our food from the forest around us. We hunt quite a bit of meat but are still trying to figure out how to preserve it without electricity. While wer have made plenty of jerky and have jarred many types of meats we are still looking for ways to preserve delicious cuts of meat without refrigeration. We would also like to avoid nitrates and nitrites. I know there are still people out there who know how to do it so PLEASE HELP if you have any hints.
