FRESH POLISH SAUSAGE

Lb. Meat
80 Fresh Pork Butts
20 Pork Trimmings
4 Ice

Lb.- oz. Spice
2 - 0 Salt
0 - 8 White Sugar
0 - 5 White Ground Pepper
0 - 2 Garlic Powder
0 - 1 1/8 Marjoram
0 - 1 M.S.G.

P R 0 C E S S I N G:
Grind all meat through 2 plate. Place ground pork in mixer and add ice and seasoning.
Mix for one minute.
Regrind through 1/4 plate.
Stuff in casings.
Stuff continuous and coil on the table for packing.
NOTE; Sharp plates should be used in grinding pork ingredients.
