I am pretty new at this smoking too but I do know for fish that you really should brine them before smoking them.Anything else depends on what you are making,ham ,bacon.....etc.,just follow the instructions of the recipe that you would be using.They would usually give you smoking instructions.Just my 2 bits, good luck!
