The University of Georgia is the Original Land Grant College (now University) in the USA. The UGA has be on the leading and critical edge of what should and sould not be done in Canning, Preservation and other Food and Storage matters.
is a study that was prepared from historical material and accepted practices in 1973, and was upgraded in 1998.
I felt it was worth bringing to your attention. You can bookmark it and read at your leasure. It does contain some very good information and perspectives.
