Research Material from Cooperative Services on Curing and Smoking Meat

From time to time, you may need some reference material, but cannot remember where you read or heard about it before.

I was researching on the subject of Smoking and Curing HAMS. It was a late in life career thought of mine, before I discarded the idea.

However this site has links to information that seems to answer many simple questions, that escape any of us at the moment.
