GHEE

4 Pounds unsalted butter
In a 4-quart pot, melt the butter over medium high heat. Foam will rise near the top of the pot, then subside into rapid, clear bubbles. About 15 minutes from that point, after the water boils off, the surface will be covered by low, large bubbles and a thin film. Turn the heat to moderately low for approximately 15 minutes more, until the clumps of milk solids at the bottom turn golden brown.
Remove from the heat and strain the ghee through a sieve lined with a piece of muslin or a clean linen handkerchief. Press lightly to extract all the liquid from the solids.
Store in Mason jars, or similar airtight heat-resistant containers, in the refrigerator or freezer.
