I am fairly new to sausage making, but have a fair amount of knowledge about smoking meats and canning vegetables.
I am looking for a good pepperoni recipe and proper procedure. I had severe food poisoning when I was younger (from a restaurant) and now have a real paranoia about getting sick by preserving meat incorrectly. So, with that in mind, I have asked for the proper procedure. I have made some summer sausages that turned out great and would like to expand my hobby with some pepperoni.
