Starter Culture

Can anyone tell me where I can obtain lactic acid starter culture for fermenting sausage? Butcher-Packer only has culture for 200lb mixes. I am looking for something smaller than that. I am just trying to start to produce fermented sausage, like salami for instance. Thank you very much,
