You could do worse than purchase a Luhr-Jehnsen Little Chief (cheaper from Cabela's than from Luhr-Jehnsen) or copy their simple design in plywood. Luhr Jehnsen's website provides info and recipes for smoking fish.

Some simple google searches will provide you with additional info.
