Hi John,

When it comes to home curing and sausage making, I think it becomes more Art than Science. In this situation, a matter of personal preference too.

If I were doing a whole brisket. The lean end would get cured and the other end would get slow smoked or in the oven with lots of onions, etc. :-)

I don't remember the proper terminology either John, it's been many moons since I have broken down a side of beef. ;-)
