slim jims real good! made 3 5 lb batches. took one out when 150 internal and showered them right away, this one was the best by far, about a nine. left other 2 in overnight with fire box choked down completly shut. a lot of wrinkles and a slightly cresote taste. the young boys i will be giving them to will hardly know the diff. next time plan to cold smoke before cooking them. thankz JOE!! don't know if the corn syrup solids (from JOE) were the magic bullet or no bue the best slim jims i made in 15 years.
