A few weeks ago Tyler Florence did a show in Italy where they made pizza. They uses what they called pendula tomatoes that were purchased locally. They were hanging in a bunch in an open air shed. Supposedly they had been lightly smoked for preservation. They said they would stay fresh for several months this way. Anyone heard of preserving fresh tomatoes by smoking them?
