For pork butt, I like aplle juice mixed with whatever rub I'm using, or apple juice with garlic salt. I've also used beer and garlic to good effect.

For brisket, beef stock with rosemary and garlic works well, as does coffee with the same spices. You could also try stock, olive oil, rubbed thyme, and crumbled blue cheese. Microwave and stir to melt cheese and get everything in solution, then inject. Impress your relatives.

For chicken/turkey, if I do anything it's usually a brine, but hot sauce is interesting, as is apple juice mixed with garlic, butter, and rubbed seasoning of your choice, like rubbed sage, rosemary, and thyme. Go easy on the rosemary here though so you don't overpower the bird.
