Sorry, but for the record, prociutto is not smoked. The real stuff is salted and air dried in caves for up to a year or longer; never cooked, except when used as as an enhancing ingredient in Italian dishes. Whatever you're asking about, sure` isn't prociutto, according to my Sicilian spoza.
