Brining of Chicken
Posted By: Henry Bacarisse

I am curious if any of you have experience brining "cubed" boneless chicken breasts. From time to time we have access to many lbs of skinless, boneless chicken breasts. I have been considering cubing (as uniform in size as possible) these breasts and freezing in 1 and 2lb containers. Store bought frozen whole breasts are usually dried out and need to be brined, in my opinion. Will the cubed chicken breasts need to be brined after or while being thawed? What is your experience or ideas, if any.
