No fridge and no nitrates/nitrites...help?

I am hoping there is still someone out there who knows how to cure meat without a refrigerator and without nitrates/nitrites. We live off-grid and hunt most of our meat. We have made plenty of jerky and have canned lots of meat but are looking to make delicious cured meats that we can keep for a long time without a refrigerator or freezer. I am hoping to learn to make dry-cured salami and other types of cured meats but all of the directions I can find require both refrigeration and nitrates/nitrites. Is there anyone left who can do this?
