Morton's tender quick

I've seen sausage recipes that call for Morton's Tender Quick to be added at a ratio of 1 tablespoon per pound of meat and other's at a ratio of 1.5 teaspoons per pound of meat. Is there a recommended minimum application rate? I checked the rec.food.preserving FAQ and found no information on application rate. I'd like to do some long period smoking and of course want to avoid problems.
