Hi Bill,

I hope you don't mean to BBQ the whole forequarter on a spit. :-)

If your going to cut it up, probably the easiest way to tenderize the cuts would be to either find a local processor that does tenderizing, or go to a restaurant supply house and get a tenderizer like Aldolph's meat tenderizer and follow the directions.

Cooking it using low heat and a long time would also do it, but that doesn't seem practical on a BBQ.
