Kielbasa

Homemade Kielbasa has been my passion for the last 6 months. Yet, I still can't seem to replicate the Kielbasa I remember from local butcher shops in my area(Southeastern Wisconsin) of 20 years ago.

I've use the standard recipe's and variations with added corriander, allspice, marjoram, savory, mace, white pepper, tellichery pepper, etc.

What am I missing to duplicate that intense tasting Kielbasa that I remember?
