RED BEET PORT WINE
5 lbs. beets
1 gal. water
2 1/2 lbs. sugar
1/2 tsp. ground white pepper
1 oz. dry granular yeast
1 slice wheat toast
Wash beets well. Grind beets skins on. Boil in water until tender. Strain through cloth. Add sugar and white pepper to liquid. Boil 15 minutes, then pour into crock and cool. Spread yeast on toast. Place on top of jar, yeast side up. Let stand 12 days in a warm place at room temperature, then strain and bottle. Ready to drink immediately after bottling.

RED BEET WINE
2 gal. water
6 lb. sugar
1 compressed yeast
16 lg. beets (ends cut off & sliced but not peeled)
1 lb. seedless raisins
1/2 slice toast
Boil beets in water until tender, strain through a cloth. Put sugar and raisins into jar and pour hot juice over it. Toast bread and spread yeast on it. Put this in 1 cup warm water and let it soak awhile. Add this to the cooled juice in the jar. Let stand for 10 days, stirring occasionally. Strain twice, then bottle. Leave stand 2 weeks before corking tightly.

BALLOON WINE
2 lg. cans frozen grape or apple juice
1/4 tsp. dry yeast
4 c. sugar
Distilled water
Dissolve sugar in juice with yeast and enough distilled water to fill gallon glass jug to the neck. Cover lip of jug with very heavy balloon (childs' punching type) and tie securely with string. Let jug set undisturbed for 3 weeks or until balloon returns to normal size. Pour or siphon off the juice into suitable glass container that has been carefully sterilized. Be careful not to disturb the sediment in the bottom of the jug. Let juice chill in refrigerator overnight and enjoy. Reusable decanters or ordinary canning jars with tight fitting lids are best for storing finished wine.

THE BEST WINE EVER
1 lg. and 1 sm. can Welches frozen concentrated grape juice
4 c. sugar
1 pkg. dry yeast
Dissolve sugar in 3 cups water. Dissolve yeast in 1/2 cup warm water. Add to sugar water, pour in jug, gallon jug with long neck. Add grape juice, fill jug to 2 1/2 inches from top, use more water if needed. Place a very good balloon over top, secure with rubber band if needed. Set for 21 days, in cool spot. When ready, syphon off with piece of rubber tubing, being careful not to disturb the settlings in the bottom.

HOMEMADE ROSA WINE
3 (12 oz.) cans of Welch's frozen concentrated grape juice
4 c. of sugar
1 1/2 pkg. of dry yeast
Mix sugar and yeast dry and funnel into 1 gallon jug. Add thawed grape juice and add water to fill jug leaving room for initial foaming (2 or 3 inch). Cover jug mouth with small piece of cotton cloth and secure with rubber band or string. Let work for approximately 3 weeks. After working stops, let stand a couple of days to settle. Syphon off leaving sediment in jug.

GRAPE, SCUPPERNONG OR MUSCADINE WINE
8 qts. fruit
8 lbs. sugar
4 qts. warm water
1 pkg. dry yeast
Dissolve yeast in sugar water. Pour mix over mashed fruit. Stir. Slice one potato and put on top then add a good handful of meal on top of that. Let stand 28 days. Stir every few days. Strain and bottle, but do not seal. George tried many times and ways to make "smooth" wine. He had basically great vinegar. This recipe is a sure fire, no fail one.

CRANBERRY WINE
1 qt. cranberry juice
1 qt. grape juice
4 c. sugar
4 c. warm water
1/4 tsp. yeast
Put in 1 gallon jar and put balloon on top of jar and let stand for 6 weeks. Replace balloon if it breaks.

CHERRY WINE
To every quart of crushed cherries, add:
1 lb. sugar
1/2 lb. raisins
For every 4 quarts of cherry mixture add:1/2 yeast cake
Let work about 3 weeks. Then strain and add for every quart of juice:
3 qts. water
2 lbs. sugar
OR: Stem and wash 1 bushel sour cherries. Put them through a meat grinder into a large crock. Stir them for 3 minutes each day for 9 days.

TOMATO WINE
6 lbs. tomatoes (very ripe), chopped
6 lbs. sugar
1 pkg. yeast
1 box raisins
1 orange, quartered (no skin)
1 gal. water
Mix all the ingredients together in a large bowl. Let stand, covered exactly 15 days. Strain through two thicknesses of muslin cloth. Bottle and drink chilled.

HOME MADE WINE
5 lbs. sugar
5 lbs. tomatoes
4 oranges, sliced
2 lemons, sliced
1 (15 oz.) box raisins
1 yeast cake
Mix all ingredients together and let stand for 15 days.
