HOME CANNING OF DRY FOODS
Such as dry beans, grains, dried fruit and vegetables, etc.
Place food into clean jars, adjust lids and –
HOT WATER BATH METHOD.
Process tightly covered jars in hot water bath for 30 minutes. Use only enough hot water to come half way up jars.
Set filled jars in a shallow pan and add one inch of water, place pan in a 225 F. oven. After 15 minutes, turn off heat, but leave jars in the oven with door closed until jars cool.
PRESSURE COOKER METHOD
Process jars 10 minutes at 5 pounds pressure. Remove canner from heat, release pressure to zero immediately by allowing steam to escape. This helps to draw air and moisture from jars.
Cool and store.
