Smoked Pork Chops

Joe, I followed your link back from the BBQ forum and I am hoping you might be able to help me. I have been trying to find the proper curing/brining method for pork loins to smoke and eventually cut into "smoked pork chops". I would like to produce something similar to the comercial smithfield product and then begin to "personalize" from there. Any ideas?
