I am of Italian heritage and as such I love a good sweet Italian sausage. I have played with this recipe for sometime now and this is the best to my knowledge of what I remember it tasting like as a little boy growing up in NJ.
Dave Starr's Sweet Italian Sausage (fresh)
10 LB. Pork butt ground w/ 1/4" hole plate
4 Tbl. Canning Salt
2 Tbl. Dextrose or 1 Tbl. Sugar
1 Tbl. Ground Coriander
2 Tbl. Fresh Cracked Black Pepper
1 Tbl. Crushed Red Pepper
4 Tbl. (heaping) Fennel Seed Whole
1-2 cups of cold water.
