Here's how I smoke my sausages (32-35mm casing size). I place the just stuffed sausages in the smoker at 130 deg. F for the first 1-2 hours with the dampers wide open (for moisture to escape). I then move the temp. up to 160 deg. F and start the smoke when the sausages internal temp is about 80-90 deg. F . I leave the smoke going until the internal temp. of the sausages reach 140 deg. F. I then remove them from the smoker and put them in a pot of 170 deg. F water until they reach an internal temp. of 152-160. Then remove from the water and shower them off to cool for about 2-3 min. Then let them hang at room temp for 1 hour then in the fridge they go. The 170 deg. water cook at the end saves about 1-2 hours in the smoker and also insures that all the sausages reach the final temp. of 152 min. Total time is about 5-6 hours.
