Lactic acid starter culture

Posted By: DaveS

What can home sausage makers use in place of Lactic acid starter cultures? I have used Fermento, and encapsulated citric acid. Did not get that real tang in my pepperoni or salamis as commerical products have. Any ideas?
Thanks,
