Sodium erythorbate, what it is..

Basically sodium erythorbate is a "cure accelerator" it's used commecially to speed up the curing process. It turns the nitrite into a gas almost immediately.

There's really no need for the hobbyist to use it, we generally are not in that much of a hurry. ;-)
