Extenders and fillers

Joe I have read a lot about fillers and extenders such as seaweed based versions such as (brand names) Eeconoblend and Trimix these products are used in the commercial sausage making and can hold up to 70 x there own weight in water. Are there some hints you can give me as to the use of such products?
