Here's my recipe for Jerky....

Dave Starr's Beef Jerky Recipe: Makes about 1 1/4 lbs.
3 lbs. of lean beef ( I use rump roast or top round)
1 1/2 TBL Morton TenderQuick
1 TBL Brown Sugar
2-3 TBL Fresh cracked Black Pepper
1 tsp Granulated Garlic
1 tsp Onion Powder
1/3 cup Worchestershire Sauce
1/4 cup Soy Sauce (I use La Choy brand)
Slice meat with the grain into 1/4"-3/8" thick slices. It is best to have the meat almost frozen for ease of slicing. Mix up the marinade and hand dip each piece of meat in the marinade. Place the dipped pieces in a ziploc bag and hold overnight in the fridge. Next day dry in smoker or dehydartor at 145 deg.F for 8-14 hours. I like to hit mine with hickory smoke for about 1 to 1 1/2 hours (after being in the smoker for an hour or so to dry the meat first). Enjoy.
