Without knowing the recipe or what type of jars, I'll assume that the ph is at 4.5 or below. If so, that's acid enough for a boiling water bath to seal them.
If the plastic lids still pose a problem, you can probably purchase metal lids on the web. There are many choices to be found using google.
If all else fails.... Buy some 8 oz. mason jars and use them to can.
