The question I have with the refridgerator conversion is this,What about the plastic inners? Does it have to be removed,replased with tin ? The next question I have is what about H2O while smoking? Do you use a water pan to replace moisture? If so, what types of food would you use this method on? I have been playing with deer bologna. The kit supplies synthetic skins. Do you recomend natural cassings?
