HI joe: To put it simple my attempt at making the generic loaf was a flop . I ground the meat to fine and didn't use enough gelatin. Also it was pretty blan. I mixed and match some of the spices that you use in making headcheese. I thought with all the bones that it wouldn't require as much gelatin. I think that if I use the neck bones again I will cure them first and use them in a recipe for headcheese that Len Poli listed . Which I used for headcheese and it turned out great. P.S. I have a large Yellow lab, who doesn't think that I make any mistakes.
