Thanks Joe. Wow ! I can see after reading your post how fermented sausages can be a hit or miss end product. I have visited Len Poli's site. Love it! Sounds like he really knows what he is doing. I followed his steps for how much starter to use. I really appericate your "Technical Expertise" as I (as probably many) find little in the way of the tricks of the trade, so to speak. Do you or did you make sausages professionally? I would love to here about your "sausage" background.
