I have a peach pie filling recipe for canning that calls for 2 cups plus 3 tablespoons of clearjel. No one carries it local for me (in fact, no one has even heard of clearjel) and I have 25lbs of peaches just waiting on my kitchen table. I'd like to know how to convert the clearjel amount to a surejel amount for this batch so I can go ahead and can this batch, and also would like to order clearjel for the future batches. Can you recommend which clearjel to order and how many boxes (I need a little more than 2 cups per batch) I'll need per batch?
