cured/semi cured sausages

Good day! My household are VERY outdoors people,boating,fishing,hunting ,4 wheeling,camping,ice fishing...etc and we buy different kinds of ready to eat sausage sticks because they are handy in a pinch!What I am getting at is I need to make my own because it cost so much to buy($4 for 2 little sticks!),do you have a recipe or two that I may try?Thanks Joe!
