Tender Quick Substitute??

I am a first time beef stick maker and I had no idea about Morton's Tender Quick as a curing agent. I could not find it at my local store so I purchased Adolph's Tenderizer. I already made my mixture of hamburger etc. Will this work with my substitute or do I start again? By not using the Tender Quick am I presenting any health issues by cooking this meat at 200 degrees for 8 hours?
