was somewhat of an ordeal! but we got the test run out of the way, fine tuned the process, and everybody is still speaking to each other...heck the stuff even tasted pretty good. The next batch if my math is correct based on a 50/50 pork to venison ratio, is about 234 pounds. Is this an insane amount for a couple of rookies on the second try?? I would like to stay married.
Questions...how stuffed do you stuff the casings? Ours looked about right, but when boiled they really swelled up in size. What's the "touch" or "feel" of a properly stuffed sausage?
I would like do some of the next run as a smoked and dried hard type of sausage...any recipes, hints, tips??
