Hi Mark.

Welcome to the world of sausage making. :-)
That is certainly a big batch for your first time out. Good luck.

First.. Don’t “boil” the sausages. The cooking water temperature should be between 160 and 190 F. Never to the boiling stage of 212 F.

As for stuffing, not too full, not too loose. Full enough so that you can pinch the casing together where the links are to be made.

Dried/fermented sausages are a whole different ballgame.
