Tender quick and Smoked Trout

I own fishing pond in Colorado and I have decided to offer my clients smoked trout in exchange for their fresh trout....at a price of course.
I have perfected my trout recipe and am quite happy with it....my question is about preservation.
If I substitute some salt for Tender Quick instead, how long will the vacuum packed smoked trout last w/ out refridgeration? With ? In Freezer?
You see, I may want to mail some of this trout to the folks homes to be there when they get home, seeing as how most of they are tourists.
