chicken roll

just wondering if anyone has ever made chicken roll for sandwich meat, not ground, whole pieces. i'm thinking of a 5" or 6" chicken roll, smoke/cooked then being able to slice it.

what would hold/bind all the pieces together in order to slice after being cooked.
