how safe is it to cure italian sausage in a cold cellar? approx 55 - 65 degress f. they are only being cured for a couple of days then vacuum packed and frozen. we've always done it in the winter when the cold cellar is very cold. my husband insists that with the amount of salt pepper and wine that they will be fine. I'm concerned of the possible bacteria growing possibilities. please advise thank-you
