Grinding pork butts

Hey Joe! In a past post you said this.
Here's what I do... I buy pork butts on sale, then coarse grind them (the fat to lean ratio of a butt is just about right, 30%.).
Then I weigh the ground meat into one pound units and freeze them.
My question is this. To get the meat to fat ratio do you trim the fat cap and most of the visible fat before grinding or just grind as they come out of the cryovac?
