preserving meat.

Hi,
I am new to this, and wonder if anyone has had a similar experience, or knows what I'm refering to.
In the mid 70's I was in Spain, and stopped in an eatery where I saw what I assume was a leg of lamb hanging from a hook above the bar. I asked for and received a hunk of it. When I bit into it, it tasted almost raw (I was mildly intoxicAted at that point). It tasted ok, and I suffered no affects from it. Does this ring a bell with anyone?
