Beef fat content

Hey Joe!
I'm getting ready to make beef sticks and read that chuck roast has the right fat content of 80-20. A small meat market just down the road has boneless sirloin tip cryovacs for $1.69lb. (I would guess around 15lbs each ) I'm not sure how much chuck roast cost but at $1.69 would the sirloin tip have the fat content I need? Next is determining fat content in sausage meat strickly an eyeball thing?
