Sausage is linked, now what?

Hey Joe!
I just stuffed my first sausages. I have 5lbs of breakfast sausage and 5lbs of Italian sausage stuffed, linked and sitting uncovered in the refridgerator. I was planning to poach these and then freeze for grilling later. Will these firm up in the frige so I can cut into seperate links before poaching or do I need to put the whole strand in a big pot and gradually heat until they float?
