Steve,

You can extrude them, skinless, on to a baking sheet, then slowly bake them until an internal temp' of about 170 is reached. Cool and freeze.
Then just "brown and serve". ;-)

Or, if you can find some "plastic" casings, the type that is used for hot dogs, which is removed and discarded after the sausages are steamed.
