newbie to smokin

I'm new to this smokin thing, so bear with me. I have an old frig, (metal inside), That I made into a smoker, (with instructions from this site). Now my question would be what now? Do I need to marinade, or cure my meat/fish, before smokin, or just put it in and go. Would appreciate any advice and direction. Thanks
