Chicken or Turkey sausage?

Hello All,
My wife wants me to learn how to make some fresh and/or smoked sausage out of chicken or turkey for lower cal purposes. I am sure it would involve a certain amount of pork fat etc. Any good ideas, tips or recipes out there? Of course I will never abandon all the other wonderful sausages I make, but this can add to the diversity of my illustrious hobby. Any input is appreciated.Thanx,
