Directions:

To the measured whole egg solids, gradually add the required water, mixing until smooth.

Whole egg solids may be blended with dry ingredients; creamed with shortening and sugar; or reconstituted with water.

Be sure to reconstitute whole egg solids with water prior to adding to hot liquids.

Store whole egg solids under refrigeration.

Directions:

Place required water into a bowl and sprinkle egg white solids on the surface.

Mix to moisten, then beat at high speed, if foam is desired, or low speed if foam is not desired.

Egg white solids may be blended with other dry ingredients in a formula.

Egg white solids cannot be over-beaten.  Beat foams to a stiff peak.

Egg white solids DO NOT require refrigeration and may be stored indefinitely at room temperature.
