Hi again, Joe. Thanks for these sites. I think I'll try making a small batch of "umeboshi." As I recall, one eats only one at a time and with plain boiled rice, shouldn't make for a salt over-load (?). Will report back. Have a good weekend and happy Fathers' Day!
