Hi Joe, you're absolutely right about bacteria being the main concern of preserved meats. Since wanting to try my hand at making salami and not being able to find a "simple" recipe for it I now intend to find the "kit" and let you know the ingredients and etc. in it. I've no desire to allow myself, nor anyone else to become ill from any homemade foods. Will inform you of ingredients and process when and if I find the kit again. Thanks
